It wouldn't seem like Christmas to me without making a slew {and I mean a LOT} of delicious, colorful Christmas Cookies. I love having variety! But don’t worry, we don’t eat them all! Although we do eat our fair share. We make lots of half batches and most importantly - we love to take cookies to neighbors and friends. It is a great chance to brighten someone’s day, make new friends, and strengthen neighbor relationships.

I love Mint and chocolate anything - it is such a satisfying flavor combination. But what caught my eye about these cookies my mother-in-law makes is how pretty they are. The beautiful yellow, green, and pink pastel mints that are melted on the top of the dark brown chocolate is so stunning. And they taste as good as they look - YUM! HINT: You can get generic pastel cream mints at Target during the holidays.

These classic cookies always "look" like Christmas to me. The striking red & white combined with the delicate melt-in-your-mouth flavor is sure to please. While a little time consuming - their beauty is not to be missed on your Christmas Cookie platter.

I never cared for Gingerbread Cookies until I made these. You know, most Gingerbread Me are hard, crunchy, and need to be washed down with a LOT of milk. But these cookies are soft, moist, and filled with flavor. These are not only fun to decorate, but a treat for your taste buds too!
Peanut Butter Blossoms Christmas Cookie Recipe
These are another classic Christmas cookie. Hershey was sure smart when they came out with the original Peanut Butter Blossom recipe to encourage consumers to buy plenty of candy for their holiday baking. These cookies are best within a couple hours of coming out of the oven as the chocolate kiss looks perfect, but is still soft and goey when eaten - YUM! But honestly, they are fantastic at any time.
HINT: If you've got little helpers in your kitchen this is a great cookie for them to help with. While you are working on baking or putting together other cookies, your kids can help you unwrap all the Hershey Kisses - it's a WIN-WIN!
