I LOVE our pancake recipe! It is quick, easy, pretty healthy (<2 points per 6-7” pancake), and adaptable (we add fruit or M&M’s for birthdays. Here was my diet breakfast: 3 pancakes, redi whip, and 1 cup of fruit – 6 points total!! It is easier to stay on a diet when my family & I are enjoying what we are eating!!
Beth’s Perfect Pancake Recipe
- 1 egg
- 2 TAB veggie oil
- 1 cup flour
- 3 teas baking powder
- 1 cup 1% milk
- 1/4 teas salt
- 1 TAB sugar
- Fruit (optional)
Beat ingredients together & cook on sprayed griddle. We mix it up by adding fruit, M&M’s for birthdays, or making them in pancake molds. This basic recipe makes 11 6” pancakes. So it is great for 2-3 people. Just make a double batch for 4-5 people. <2 points for 1 pancake.
