Pizza Quesadilla

You are going to love this Pizza Quesadilla recipe, it is one of our family favorite lunches. It's easy to make, delicious, and gives weekday lunches a good variety.

I feel like we always have the same old boring lunches at our house. Anyone else feel like that? So I am always on the lookout for a yummy, inexpensive, and easy lunch idea! Several weeks ago we were at a friends house for a playdate and my friend made Pizza Quesadillas. YUM!! They have not become a welcome addition to our lunch menu and I thought I’d share them with you too!






Pizza Quesadila Recipe

Here is what you use – flour tortillas (I like the inexpensive Target kind), cheese (pizza or mozzarella), pizza sauce, pepperoni (or whatever toppings you like on your pizza), butter or cooking spray, and a hot place to cool them (quesadilla maker or hot griddle).

Put a light amount of pizza sauce on one flour tortilla

add pepperoni

Add pepperoni (or other toppings of your choice)

top with pizza cheese

Top lightly with cheese (not too much or it will goop out the side). The top with a lightly buttered (or sprayed) tortilla – this helps it brown and have the nice crispy exterior.

Cook. We have a quesadilla maker we bought for 90% off at Kohls one year so we use that. My friend used a griddle which worked perfectly with the added bonus of being able to do 2-3 at a time! The only real downside is you have to flip them half way through.

While the first one cooked the kids enjoyed making their own quesadillas!

Slice quesadilla into wedges using a pizza cutter and serve with fruit, veggies or other favorite sides. Enjoy! Note: We ate 4-5 slices each if you are trying to figure out how many to make.
