Best Ever Tomato Soup Recipe

This is not only the best ever tomato soup recipe, but it is actually good for you too! This is our families favorite recipe; I know your family will like it too!

Winter is soup season.





And believe it or not, our family loves soup season. The reason is that we have created some unique, flavorful soups that are exciting to eat. No canned soup at our house!





This Tomato Soup Recipe is one of our favorites. It is full of flavor, creamy, and delicious. Besides being full of lots of hidden veggies, is has a secret ingredient - BACON!  As we tell our kids - everything in moderation.

Best Ever Tomato Soup Recipe

In 2 TAB olive oil over medium heat cook cut up 4 slices of bacon. This part is optional, but the bacon adds a really great dimension to the flavor.



Chop up 3 stalks celery, 3 carrots, 3 cloves garlic, and 1 onion. Add to the bacon and cook until it is all mostly tender, about 5 minutes.

Scoop all the veggies from the pot in to a food processor.

Mix until smooth.

Now mix 28 oz (about 4 cups) of fire roasted tomatoes. You don’t want them completely smooth.



Note: If you are using garden fresh tomatoes here is how you fire roast tomatoes.

In large saucepan or stock pot add 1 quart chicken broth, blended veggies, and tomatoes.





Add 1 teas oregano, salt & pepper, 1 teas sugar, 1/2 teas crushed red peppers. Add a splash of cream or whole milk (it makes it extra creamy)



Simmer 15 minutes or longer to blend flavors.

The soup is just thick enough to be filling. Is filled with lots of good for you veggies. And it has such an incredible flavor don’t be surprised if everyone asks for seconds….. or thirds!

    ingredients:




    2 Tablespoons olive oil


    6 slices bacon, cut


    3 stalks celery, chopped


    3 carrots, peeled and chopped


    1 large onion, chopped


    3 cloves garlic, chopped


    28 oz fire roasted tomatoes


    1 quart chicken brooth


    1 teaspoon oregano


    1 teaspoon sugar


    1/2 teaspoon crushed red pepper


    salt & pepper to taste


    splash of heavy whipping cream or milk 












    instructions:

    Put tender vegetables in food processor until smooth. Add 28oz fire roasted tomatoes until thick. Pour back in pan. Add broth, seasoning, and a dash of milk. Serve warm.
