Pretty & Sweet Beet Side Dish Recipe

About a year ago we discovered our family actually liked beets. Now we are always trying to find a new beet recipes to include these super nutritious, good for you food.  This Pretty & Sweet Beet Side Dish was so delicious I had to share.

This recipe makes a pretty & sweet side dish or throw in some breakfast sausage links for a complete lunch time meal.

Colorful Beet Side Dish Recipe


First, preheat the oven to 400 F.



Delicious Beet Recipes



Now cut 5-6 raw beets into chunks and toss with 1 TAB olive oil to coat. Spread in a 9x13 pan and bake 15 minutes.



HINT: Beets may temporarily stain your hands red. You can always wear kitchen gives if you prefer. To cut beets, I slice off the top and bottom (like I do for an onion) and then you can use a peller or a knife to cut off the skins. Now just cube like you would a potato.



Sweet Potato Recipe



Meanwhile, peel 1 large sweet potato and cut into 2” chunks. Chop 1 large sweet onion into large strips. Toss sweet potato and onion with 2 TAB olive oil, 2 minced cloves of garlic, 1 teas seas salt, and 1 teas black pepper.



Pretty & Sweet Beet Side Dish REcipe Toss the sweet potato mixture in with the partially cooked beets. Continue cooking for 45 minutes or until all vegetables are tender.
