This is going to be your new go to easy dessert recipe for fall! It is easy to make and tastes amazing.





mix flour, sugar, baking powder, salt and cinnamon in a bowl





Start out by preheating the oven to 350 F. Now mix 1 cup flour, 2 1/2 teaspoon baking powder, 1/2 teaspoon salt, 3/4 cup granulated sugar, 1/2 teaspoon cinnamon, and 1 teaspoon all spice in a bowl.

Next add 1/2 cup pumpkin puree, 1/4 cup milk, 1/4 cup melted butter. and 1 teaspoon vanilla.





stir in 1 cup white chocolate chips to the pumpkin mixture





Finally, stir in 1 cup white chocolate chips (optional, but YUMMY!) Pour into a medium size casserole dish, souffle dish, or 9" square pan.





mix together the topping - oats, brown sugar, and pecans





In a separate bowl mix together the topping: 1 cup brown sugar, 3/4 cup quick oats, 1/2 teaspoon cinnamon, and 1/2 cup chopped pecans and sprinkle over pumpkin cake.





Pour 1 1/2 cup HOT tap water over the topping. DON"T MIX! This will help make the yummy caramel sauce!






cut the pumpkin lava cake and put into serving bowls; then scoop out the decadent caramel sauce from the bottom and drizzle on top of each serving.






Bake 45-50 minutes or until the center is done. Allow it to cool 5-10 minutes before serving.





When you serve you will see the pooling of the caramel sauce under the cake! YUMMY!

INGREDIENTS:






  • 1 cup all purpose flour

  • 2 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3/4 cup granulated sugar

  • 1/2 teaspoon cinnamon

  • 1 teaspoon all spice

  • 1/2 cup pumpkin puree

  • 1/4 cup milk

  • 1/4 cup melted butter

  • 1 teaspoons vanilla

  • 1 cup white chocolate chips




TOPPING


  • 1 cup brown sugar

  • 3/4 cup quick oats

  • 1/2 teaspoon cinnamon

  • 1/2 cup chopped pecans







  • 1 1/2 cups HOT water






INSTRUCTIONS:






  1. Preheat oven to 350 F.

  2. Mix all ingredients in a bowl and pour thick batter into 8" souffle dish or square pan.

  3. Now mix together the topping and sprinkle over top.

  4. Pour 1 1/2 cup HOT water over the top of the ingredients - DON"T MIX!

  6. Serve a piece, then scoop some of the lava sauce from the bottom of the pan over the top, and serve warm with a scoop of vanilla ice cream!
