ingredients:





1 tablespoon coconut oil


1 medium yellow onion, diced


5 cloves garlic, minced


1 Serrano Chile, sliced into rings (remove seeds for less heat)


4 cups cooked brown rice


16 oz can pineapple chunks, drained


1 cup peas, thawed


1/2 cup cashews


1/3 cup chopped cilantro





Sauce:



1/3 cup low-sodium soy sauce


1/3 cup vegetable stock


1/4 cup molasses


2 teaspoons ginger


2 teaspoons arrowroot powder (optional to help it thicken)







instructions:








Heat coconut oil in large skillet over high heat. Add onion, garlic, and chile and stir fry for 4 minutes. Add 2 tablespoons water and add pineapple, peas, rice, and cashews and cook over medium heat until heated thoroughly; about 4 minutes. Meanwhile, mix together the sauce and pour over rice and continue cooking until heated thoroughly. Serve warm or leftover in kids lunches cold.
