Rice Recipes
Heat coconut oil in a large skillet over high heat. Add chopped onion, garlic, and Serrano Chile and stir fry for 4 minutes.
Add water, pineapple, peas, rice, and cashews and cook over medium heat for 4 minutes or until heated thoroughly.
Whisk together soy sauce, vegetable stock, molasses, ginger, and arrowroot powder.
Pour over rice and continue cooking over medium heat until thoroughly heated. Sauce will be thicken from arrowroot powder.

Holy cow! You are going to love this Out-of-this-World Pineapple Fried Rice that is easy to make, delicious, and chocked full of healthy ingredients.
ingredients:
1 tablespoon coconut oil
1 medium yellow onion, diced
5 cloves garlic, minced
1 Serrano Chile, sliced into rings (remove seeds for less heat)
4 cups cooked brown rice
16 oz can pineapple chunks, drained
1 cup peas, thawed
1/2 cup cashews
1/3 cup chopped cilantro
Sauce:
1/3 cup low-sodium soy sauce
1/3 cup vegetable stock
1/4 cup molasses
2 teaspoons ginger
2 teaspoons arrowroot powder (optional to help it thicken)
instructions:
Heat coconut oil in large skillet over high heat. Add onion, garlic, and chile and stir fry for 4 minutes. Add 2 tablespoons water and add pineapple, peas, rice, and cashews and cook over medium heat until heated thoroughly; about 4 minutes. Meanwhile, mix together the sauce and pour over rice and continue cooking until heated thoroughly. Serve warm or leftover in kids lunches cold.
