I love potato recipes!
Potatoes are cheap, loaded with vitamins & nutrients, and so versatile.
Recently, with the apple peeler sitting out on the counter after processing our apples into homemade applesauce and apple chips, I thought – I wonder how it would work to put a potato through the peeler.
Well, the rest if history (so to speak). You get a beautiful, unique potato perfect for stuffing.
Potato Recipe
First of all you need an old fashioned apple peeler. This is the best gadget and you are going to want one of these. It will peel, core, and slice your apples all in several easy twists of the crank!
You will want to peel one potato per person and then run them through the apple peeler.
Note: Since I know you are going to ask…. the potatoes above are a pretty pink blush potato variety we grew in our garden this year.
See how cool it looks. There will be a hole down the middle and the rings of slices are all attached making a pretty accordion.
Now preheat the oven to 375 F and grease a square baking pan.
Now chop of the following:
- 1/2 onion
- 4 slices bacon (we use nitrate free)
- 3 leaves basil
- 1 red pepper
Now put 4 Tablespoons butter (we use organic salted), 2 minced cloves of garlic, and several dashes of salt & pepper in a microwave safe bowl. Melt the butter.
Now set the potatoes in your greased square pan standing up tall. Fill each hole with your mixture of bacon, peppers, basil, and onion.
Now turn the potatoes onto their side and put any remaining topping scattered around the potatoes. Pour your butter mixture over the top of the potatoes. Bake for about 30 minutes.
Here is one of your delicious stuffed accordion potatoes. So pretty AND yummy!
