Banana Pancakes
Start off by whisking together milk, eggs, vanilla, oil, and yogurt.
Smash 2 ripe bananas.
Add smashed bananas, oatmeal, flour, baking soda, salt, brown sugar, and chopped pecans.
Pour pancake batter onto a hot griddle. Flip the pancake when it begins to actively bubble; cook until other side is golden brown.
Stack up these delicious banana pancakes that are as yummy as they are filling.
We like to eat these scrumptious pancakes topped with warm maple syrup or with whipped cream and additional pecans sprinkled over the top.
HINT: Make it a special occasion by throwing some chocolate chips in the batter too!
Banana Oatmeal Pecan Pancakes
2 smashed bananas 3/4 cup milk (we use 2% or higher organic)
1 cup oatmeal (quick oats) 2 eggs
1 cup flour 3/4 cup plain yogurt
1/4 cup brown sugar 1 teaspoon vanilla extract
2 teaspoons baking powder 1 cup chopped pecans
1/2 teas salt 1/4 cup oil
Whisk together milk, eggs, vanilla, oil, and yogurt. Then add in remaining ingredients. Pour pancakes onto a hot griddle. Serve with maple syrup and whipped cream.
